General description

Allura Red AC belongs to the class of monoazo dyes.^[1] It comprises of 6-hydroxy-5-(2-methoxy-5-methyl-4-sulfonate-phenylazo)-2-napthalene-sulfonate, which is basically an azo-coupling product between the meta-isomer of cresidine-p-sulphonic acid (CSA) and Schaeffers salt (SS).^[2] It exists in the form of dark red powder or granules and finds application in being used in food colors. It is soluble in water and is insoluble in ethanol.^[1]
